Smoked Trout and Dill Spread

Here’s a simple and delicious show-stopper from my birthday party this past week:

  • cream cheese (I used homemade neuchatel). I didn’t soften the cheese ahead of time.
  • sour cream (I think I used about 6 oz of cheese to 1/2 or 1/3 of a pint-size container of sour cream)

You may choose to use more or less of either depending on how thick you like your spread. I like mine pretty thick.

  • chopped smoked trout, to taste (I used 2 fillets). Note that I used store-bought cold-smoked kind, not my own hot-smoked trout.
  • chopped dill, to taste (1-2 T), plus more for garnish

Mash sour cream into cream cheese with a wooden spoon, and stir in trout and dill (the two pair beautifully). I found that it needed no extra salt or pepper. Place in a pretty bowl, sprinkle with more dill, cover with saran, and chill before serving. Makes an excellent appetizer to be spread on some crackers or pita bread wedges.
